Authentic Thai Curry Paste Recipes

You probably know that there are red, green and yellow Thai curry pastes, so here are recipes for all of them.

Authentic Thai Green Curry Paste Recipe

2 tsp coriander seeds
1 tsp cumin seeds
1 tsp black peppercorns
8 fresh green chillies, seeded and chopped
3 shallots, peeled and chopped
4 cloves garlic, peeled and crushed
3 coriander roots, chopped
2.5cm piece galanga, peeled and chopped
2 stalks lemon grass, chopped
2 kaffir lime leaves, chopped
2 tsp shrimp paste
2 tbsp chopped fresh coriander leaves

Toast the coriander and cumin seeds in a dry frying pan then crush with the peppercorns. You can use a pestle and mortar but using an Electric Coffee and Spice GrinderSpice Grinder is much easier.

Add all the other ingredients to the mortar and crush or use a mini chopperMini Chopper

Authentic Thai Red Curry Paste

1 tbsp coriander seeds
1 tsp cumin seeds
1 tsp black peppercorns
4 cloves garlic, chopped
3 coriander roots, chopped
8 dried red chillies, seeded and chopped
2 stalks lemon grass, chopped
grated peel of ½ kaffir lime
3 cm piece galangal, chopped
2 tsp shrimp paste.

Heat the coriander and cumin seeds in a dry pan until fragrant. Crush and add the remaining ingredients, mixing to a smooth paste.

Yellow Thai Curry Paste

½ to 1 stalk lemongrass, chopped
1-2 yellow chillies, chopped
2 shallots, chopped
2.5cm piece of galangal, chopped
4 cloves garlic, chopped
1 tsp ground coriander
1 tsp ground cumin
1/2 tsp cumin seeds
1/4 tsp cinnamon
2 tbsp fish sauce
1/2 tsp shrimp paste
3/4 tsp turmeric
1/3 tsp white pepper
2 tbsp palm sugar
1 tbsp lime juice

Mix all the ingredients together until they form a smooth paste.
